If that's verbatim as you said, then it doesn't confirm that the co-worker is skinny. Just in their eyes she is getting "too skinny."
So yeah likely she is skinny (I do think it is the case)
But there's also the chance she's just less fat then them and maybe outpacing them on a weightloss contest and trying to get out the bucket.

Ugh. My boss wanted to get me an ice cream cake for my last day because they are cheap and own an ice cream store. Too bad I hate cake and I am allergic to ice cream. They got the cake anyway. Good thing my other coworker who actually knows me brought in 20 delicious egg rolls.
