I always love saying I eat so much, but can't seem to gain any weight. Seeing the anger on people's faces...it makes me feel all warm and fuzzy inside.

If that's verbatim as you said, then it doesn't confirm that the co-worker is skinny. Just in their eyes she is getting "too skinny."
So yeah likely she is skinny (I do think it is the case)
But there's also the chance she's just less fat then them and maybe outpacing them on a weightloss contest and trying to get out the bucket.
