Kimchi? Depends on the veggies. Cucumber takes very little space. Napa can take a lot more. The basic recipe is the same for most veggies. But home much space you need to draw our the moisture can vary
Cucumber I've seen wifey do is easy. You get the smaller Persian cucumbers. You cut them in half horizontal. Then vertically you cut a cross into them that goes half way down. You spread it open (don't break it!) And coat in good coarse salt. Let it drain water for like 30-45 minutes. Rinse all the salt off, then using the same sauce you'd use on Napa kimchi, you coat the cucumber all over and in the cross. Jar, and enjoy. It keeps for about a week
