Those are all pretty fancy rounds. The ammo will cost you a bunch. Get a .308 bolt action. Remington 700 action. Get a good scope. Practice.

I was concerned that .308 might not have the punch to drop a mule deer cleanly at the longer ranges

I'm still a fan of the Remington 700 .308. Wish I bought the long bolt action... Good accuracy, reasonable price, tons of parts to shop.

I would say buy a rem. 700 action and barrel. Pick up an HS presicion or bell & carlson stock with an aluminum block. Bed it. Drop in a timney trigger. The x mark pros are not too bad. I am partial to .284 caliber. Replaced my 7mil rem mag with a .280 rem. So i am biased on those calibers. If you want .30 cal get a 30.06, it does everything the 308 can and more. Bullet size has huge range from 120gn to 180. 300 win mag is finicky and can be frustrating to find a load it likes, it almost demands a reloaders touch.

I am a reloader and because of that i pick what ever cartidge i want with no worries of availablity or price for a box of 20. But if you want a capable caliber that can reach out there, is versitile and factory loads are easy to find... 30.06 is your best bet.

Weight won't be too much of a problem, I'm used to walking around with a 28" barrel 12ga from dove hunting and shooting clays and this will be a hunting riffle so I won't be shooting out any barrels.

I can't say enough about my Remington model 700 30.06. Bought it 35 years ago. Best shooting rifle I've ever owned. Would be perfect for mule deer at those ranges.

Buying, building is the first question mmm the mauser 98 action has many barrels for caliber, lots of parts. In 8mm 200 grain semi jacketed flat nose or standard boat tail can do quite a bit, there are all kinds of FITTED BARRELS 7MM/338, .308 WIN/ 308 WIN/ 7.62x51 mm .30-06 lots out there fairly reasonable.
