Theft doesn't absolve you of poisoning charges. Yes, you can get in legal trouble for poisoning foods that you knew or had reason to believe that the ham would steal. This is because, while you may think it's believable that you just really enjoy foods tainted with laxatives or pepper extract or whatever, your intention to cause bodily harm is readily apparent, given the circumstances.

Interesting. So if I put razor wire on top of my fence, is my intention to cause bodily harm to trespassers readily apparent as well? I know the legal system is kind of up its own ass these days. I've heard of people committing crimes and trying to sue the victim over silly things.

The razor wire example doesn't work, because someone intending to trespass will see it and know that they'll hurt themselves doing so. The poisoned food would be more like if someone is cutting through your backyard even though you asked them not to, so you lay down a landmine. Of course they shouldn't be trespassing, but that doesn't give you carte blanche to inflict bodily harm on them when they do.
