not much worth doing in your hotel area, victoria is kinda soulless and odd. but you have easy access to rest of london. first time you pass a tube (underground/subway) station buy a pay-as-you-go oyster card and put at least twenty pounds on it. all galleries and museums are free.

hyde park and kensington gardens are always nice, there are two art galleries in the park - serpentine and sackler galleries, and not too far from the park - victoria & albert museum, natural history museum, science museum - south kensington area.

borough market is popular for foodies (london bridge), portobello market can be fun (notting hill) best breakfast for miles can be found at Electric on portobello, directly opposite is amazing coffee at Coffee Plant. berwick street area of soho has some good food markets, flat white on berwick street (soho) is a nice little place to grab coffee. monmouth street coffee (covent garden area), soho grind - beak street (soho), fernandez & wells (soho), kaffeine in fitzrovia, all very good for coffee fans.

the national gallery / national portrait gallery worth popping into. these are in trafalgur square. close to chinatown, not too far from soho. loads of great shopping and restaurants and cafes in soho. i could recommend plenty places to eat if you wish. soho good place for bars too, but if you want a younger drunker crowd head to bars in old street / shoreditch area. london fields bbq mayhem can be interesting on weekends.

tate modern is good. tate britain is too, and not too far from victoria.

you may also enjoy taking the DLR train from bank station (can use oyster card) to visit greenwich area, perhaps walk through the greenwich foot tunnel under the thames for your return journey.

https://tfl.gov.uk/plan-a-journey/ is great for planning journeys, and helps with buses which don't have their own handy map like the tube does.

whatever you do - don't eat at angus/aberdeen steakhouses, or any restaurants aimed solely at tourists. stand on the right, walk/run on the left on tube escalators.

also - if you google interesting bus routes for tourists you can use oyster card to hop on and off any red bus, and see plenty of attractions without taking one of those tourist sightseeing buses.
