Betrayal At House On The Hill. You explore a randomly-organized haunted house (you flip cards for the rooms) and take part in random events for items. After a while, the game changes and you have to do one of 50 different scenarios, all of which are brought about by different circumstances. It's awesome because it's different every time.

Risk, by far. It's one that you need to devote an entire evening to, but damn is it worth it to watch your friends and family tear each other apart.

I've never been a fan of Risk, it's way too dependant on luck for my tastes, I find Axis & Allies (looks and feels quite similar to Risk) better in that regard.
