Gluten sensitivity in non-celiacs appears to be a disease of the mind (correlation, not necc. causation) rather than the stomach: http://onlinelibrary.wiley.com/doi/10.1111/apt.12782/full

i'm sure you're just a special snowflake with a non-celiac gluten sensitivity, and not a placebo-ridden bandwagoner.

It's just another consumerist piece of bullshit. Now I won't sit here and say certain food don't mess with people, but I can almost positively say that short of Celiac disease, their illness because of food has nothing to do with gluten. It's just such a broad superficial characteristic of foods that includes a wide range of both healthy and unhealthy food. And putting "gluten free" on the box is just another way to increase the price of whatever you're buying. I'm kind of convinced that most "gluten free" advertised products actually contain gluten anyway. Monsanto can get away with poisoning foods without informing the people of what's actually in their food, I see no reason why gluten free makers would actually be honest when lying makes an easy dollar.

The link you provided is a single study covering only 37 persons. This is far from enough to back up the claim in the title of this post. I do believe that non celiac gluten sensitivity is bullshit, but let us stay rational about it. Is there any metastudies about this topic?

I get these weird bumps on my arms that people seem to think are a gluten build up. Idk how accurate it is but I love bread too much to find out.

It's like the MSG worry (except that some people actually have a medical condition and anyone else is just trans-celiac).
