You can't really do anything about the deserts and tundra without changing the climate. As for the oceans, people are in fact working on how to utilize them better all the time. Especially when it comes to sea farming. What's great about being an ocean nerd as opposed to a space nerd is that you get near instantaneous results. There's no waiting for launch windows or waiting for equipment to cross the void to reach it's destination. Even better, if something breaks it can easily be repaired. In space though, if something breaks it's screwed and you have to start all over again.

It would be fun to find an Earthlike planet and move there with like 300 people (or however many it takes for good genetic diversity).

I agree but I feel like our species branching out is more about the upward trend of overpopulation in the past 70 years and the absolute need to try and even fail to get our seeds off this planet before we are engulfed by our own garbage piles. The rats will take the deserts and poisoned oceans while us whites will share space with among the stars where we belong. 130% increase in population in 70 years doesnt speak well for the next half century.
