Odds are governments don't care even slightly about you. "They" just want the ability to know, just in case. It's all about power. Companies are after your eyes for ad impressions, software installs and browsing habits they can resell. They're all about money.

For government, it is about gathering statistics and training algorithms. They want to know what normal is so that they can find the outliers and unusual people who could be the terrorists and bad people. So they aren't interested in you but they need your data.
