I literally have to take a Gainer Shake every morning after I work out which is about 6 tablespoons of peanut butter, a couple scoops of protein powder, a cup of oats and a few tablespoons of olive oil. This will give me a quick thousand calories. On top of that I eat all of my regular meals each day. I still have a hard time not losing weight.

Right, and you work out tons. So you burn a lot of that. On top of your BMR which is high because of your muscle mass. CICO.
