Could I easily build a replacement?

I looked into this a little bit like six months ago and it didn't seem like an option. Either it was too complicated or the parts just weren't available. You could easily find another one of those used with transducer for less than $50 before next ice fishing season if you kept an eye out.

Warning: I have no idea what the hell is in that end that goes in the water.

Transducer? Probably a microphone. Experiment with some microphone transducers. I'd bet you'd have to try many to replicate the original device's output. Might have to create your own gain circuit, if you can't find a transducer that makes the same output as the original.

Sure, if you're an electronics engineer.

I guess maybe you could try just substituting a slightly more modern sonic reducer
