Pretty good episode, probably my favorite of this season so far.

Okonomiyaki sounds delicious, I think I'll try making it this week.

It's my favorite Japanese food Here is a recipe. I replace the pork belly with bacon, and don't mix any inside the pancake. I also skip the grated mountain yam because I can't find it.

Here is the specialty ingredients:

  • Pork belly, you can get it at some meat departments, I just subsitute bacon
  • Tenkasu, Tempura scraps, an Asian market, I just skip it
  • Nagaimo/Yamaimo (mountain yam), an Asian market, I just skip it
  • Kizami Beni Shoga, red pickled ginger, an Asian market or well stocked grocery story, be careful as this is not the pink pickled ginger you get with sushi, it will be cut into thin strips and it's sour
  • dashi, any supermarket, it comes in a small bottle check by the asian or sushi supplies
  • Japanese mayonnaise, any supermarket, again by the sushi supplies "Kewpie" brand is really common
  • Okonomi Sauce, or Tonkatsu sauce, this was the hardest to find, you can get it a Japanese grocery stores or Amazon I use Bull-Dog brand
  • Katsuobushi, dried bonito flakes, any asian market; they are extremely thin strips of fish jerky that will move when placed on hot food because they sway in the heat rising off it.
  • Dried green seaweed powder, Aonori, any asian market; you could substitute finely chopped pieces of nori.

You will forget something, don't worry about it, I only remember everything 60% of the time. It's meant to be a kind of laid back food. Here's a howto video cooking with a dog not to be confused with "cooking a dog" ^_^
