With 8 chickens, yeah. You could make soup out of them for 1 or 2 meals a month, when their egg-laying slows down. But you would need hundreds to really supply the caloric base of a small family.
For beef, you could find a good farmer and buy 1/2 and 1/4 cows at a time, make sure the farmer isn't feeding them gross shit. That's cost effective and not entirely unreasonable, but you are still at the mercy of the farmer lying to you and more likely the feed supplier lying to the farmer.
But a goat is a better choice for the "1 larger animal". Way less feed, diseases and more milk production per space taken up

That's insane. Chickens are only good for the eggs. We need beef to eat to be strong and healthy.
