For the customers, lawyers, and auditors. I do believe that frequent hand washing and your typical "GMPs" do greatly reduce the risk of transmitting bateria and illnesses. I'm QC of my facility and I've found that by connecting with them on a real level and actually going out of my way to help them even with non work related things, they're much more likely to heed ones advise. It's literally my job to catch and correct GMP violations and the job only gets harder if you don't gain their respect.

Actually we've changed the requirement to have them posted on doors used to exit the room in which you'd be required to wash your hands before leaving. Like a reminder "before you exit!" But yes you're also correct in that they're completely disregarded.

can't speak for everyone else but in my state its a requirement in the food permit inspection list, so if you don't have it you get a strike, and if you still don't have it in the second visit you get closed down.

In health care we have people dedicated to going around teaching handwashing. Handwashing is the single most important thing in infection control. We are fucking terrible at it. A sign is certainly not going to help. If I was less rushed I would be more inclined to make sure I properly wash my hands every time.
