Sure, here's a picture from Voyager showing some of the planets.
And why don’t they just adjust exposure settings to show these celestial bodies when the sun is not “out?”
Because it would let in so much light bouncing off the earth it'd be pure white.

If you're asking why Voyager only sent still images, the answer is because it doesn't have a video camera. Is that news to you?
