Because the bible is unlike any book in the history of Earth. It has (numbers are approximate) 2500 prophecies, of which 2000 have come to pass.
I know what you're going to say. Jesus said (I'm paraphrasing) he doesn't speak plainly because if he did even the unsaved would be able to have all their prayers answered. Meaning that if there is no element of insight (given by God which comes from reading his word) unbelievers could just use the bible like a tool, or just doing what the letter of the law says.
Also, God actually spoke to me (in my head) when I was praying super intensely to him kind of recently. It wasn't Allah or Moses I was praying to, it was the god of Jacob, Isaac and Abraham.

How can it be the true "word of G-d" if it was written, translated, edited, etc, by men?

No, it was written by a human.
God being who he is, has a lot of power. Do you think he would allow us to change, mistranslate or edit/remove anything from his word without his consent?
If you were God, would you write a life manual on how you want people to act during this physical existence? If so, would you allow us meat sacks to change it for their own purposes? To pervert or abuse it in any way?
I wouldn't, this seems like common sense, which God gave us.
