Trump himself knows every word of the unredacted documents. He has much more information for his decisions how to go on. So if i.e. Coats is mentioned there, he surely wouldn't trust him and definitely not give him the order to release the documents.

The answer is simple. It's faster for Barr to declass -- but more importantly, he (his team) can review all of the docs -- and it reduces the chance that the FBI or other agencies try to withhold critical information. Barr will not tolerate the shenanigans that Wray has been pulling -- if he tries to withhold information Barr is requesting well then he'll be in the kill box.
