Onions, green beans and radishes are easy. I grew those as a kid.

I forgot the radishes one time and they became as big as an apple, but didn't taste great anymore...

TOMATOES. THE FUCKIN ANSWER TO EVERYTHING IS TOMATOES.

For real though, they're easier than everything I've seen recommended so far. If you grow one plant, just fertilize it with some fertilizer once in a while, water it (but make sure you don't get the leaves wet), put it in a cage and you'll have some good ass tomatoes guaranteed.

Gotta agree with the tomato freak on this one, especially when starting from plants tomatoes are extremely easy and satisfying to grow for beginners. You can get a decent crop from one or two plants with very little effort, or a massive crop if you put in a little more effort. And showing off home grown tomatoes is easy because people will know how to eat them, show the same people an eggplant or squash and they ask if it's even food.
