I love making jams as well as chutneys (pumpkins are great for this and they're always in abundance in Autumn. Storebought they come quite cheap too then)
For jams, I love adding cinnamon, cocoa (or just chocolate), ginger, or raisins. It makes for interesting combinations and can add some extra dimensions. Also I love adding food coloring if I feel a jam needs to be looking bright and fun to try. So far my favorite is to make a green orange jam.

It can be a bit overwhelming, at first. Try focusing on canning one new thing per season. First year we had our garden we just did salsa. Second year we did jam, salsa and pickles. I am going to try to add diced tomatoes and tomato paste this year as that's something I buy almost every grocery order!

Just to clarify what I find overwhelming is to try a couple recipes and see what we like best and then to produce multiple batches.
I always am leery on canning recipes from the internet as botulisim can be deadly!
