OT is just the Torah. Following the Torah doesn't necessarily make you Jewish. Following the NT makes you Christian (spare me the catholics aren't christian bs) but the difference is one came after the other. I would find new beliefs which I believe preach a message of truth, because even if Islam weren't real, I still believe in monotheistic God, for my own philosophical reasons. I would either find a new school of belief or I would act upon my own views of morality (rejecting what I believed was made up that I had not believed myself due to my own ideas about God and reality) and worship God as I believe him to exist, regardless of the contents of any holy books or the preachings of any I believed to be a false prophet or the sets of beliefs that you have to take all together to follow a religion. To worship God and to follow a religion are 2 different things. Religion is more than a set of beliefs, but it is also the guide for how to act based on those beliefs, the rituals involved with expressing them, stories about God and His creation and following the specific commandments of God. I can believe in God without following a religion by choosing my own beliefs, expressing my beliefs as I see appropriate (even thanking God for your blessings and praying for him to help you is enough), ignoring the stories and (rather than acting on commandments) I would decide based on my own conscience what is right and wrong in deciding how to live my life because I have faith that God would reward my actions

The source of Christianity's problems lie in the Bible. Just take honor; what place does personal honor have in a religion that says you must meekly submit to and beg favors from a capricious God? You are his lamb and he is your Shepherd! It's the opposite of honor. But you couldn't possibly understand chivalry if you didn't include honor.
As Christians got more literate and the Bible became more available, priests found they had to follow written doctrine or they would rightly lose credibility. That's why around the 1500s you suddenly have an emergence of insane cults, genocidal doctrinal wars, and witch burnings. But you can't just replace the texts, it's far too late for that.
Someone who is actually a monotheist would be best served by following the writings that the Jews plagiarized from, i.e. Zoroastrianism and Roman Stoicism, the first for its beauty and the latter for its logic. If you're an agnostic, the pagans are closer to your thoughts, and yes most of them thought of their myths as metaphors and not the literal truth. If you're an atheist, read Nietzsche. BTW Jesus first tried to convert the Jews into believing in him to fulfil his position as the messiah. Right before he ascended, he then commanded his disciples to go out into the world and convert everyone else as well. This is a reminder that God loves the world and doesn't want anyone to perish but to accept him and have eternal life.
