I usually use some fresh dill or tarragon and fresh squeezed lemon juice. Also, a little Old Bay seasoning is an easy way to add some spice.

I like no pickle, chopped fresh dill and Grey Pupon for the mustard. Never tried adding cider vinegar or lemon though.
