They were using iPhones. The messages go through a server, not SMS. Everything that goes through a server gets sniffed and recorded. That's how they recovered the messages.

Msybe because I think Deleting is not enough. You need to overwrite to eliminate data from being recoverable. This would allow the unknown user to unknowingly overwrite on the device? Thats ny guess.

Yeah, No...that’s a cover. Hubby worked at Pentagon. They still have that info, even if it’s not directly on the phone anymore. When you are using a Govt phone, Govt computer, etc, they have a record of EVERYTHING. They are playing “word games”, so that unless you use the absolute correct wording, no one would automatically be able to subpoena these Govt stored records. They’re Lying.
