"Chinese food" is actually an Americanized version of the Cantonese school of Chinese cooking, unless you are going to a really upscale place.
I do like Americanized Cantonese food though.

Which side of the country are you on? I've noticed a vast difference in taste between the two coasts. West coast is much better in taste when it comes to Chinese food.

It's definitely just you
Vietnamese food is utter shit, Thai is pretty good, but Chinese is the best of Asian

Vietnamese and Korean make food Vietnamese and Koreans eat. Same with Thai. Did you ever ask why you never see Chinese eating at SumTing Wong Chinese Take-Out or City (Shitty) Sushi Gourmet? It's not food they eat. In fact most of the dishes are made up for Americans. The Chinese restaurant in my area has 2 menus... the shit for Americans and the Chinese one which mainly is like giant soups and stuff that they will all share with this spinny table.

I think you'll enjoy more if you eat the food they serve in the restaurant, rather than eating the restaurant.

Maybe try a new spot or dishes that you’ve never had, I like to cook my own whenever possible. Can be Fun and healthy with some music and spirits. Lol.
