I'm also veggie, I did a really nice veggie chilli the other day. I put in black and kidney beans, bell peppers, tomatoes, coriander, smoked parpika, lime juice, red and green chillies, sweet potato and some black chia seeds.
I made six potions, had some with rice (if your BF isn't too inclined to boil then that throw in the microwave stuff is good) and I also served it with a baked potato a couple of times.
I also, when I wanted to vary the texture a little, reheared but with some quorn mince thrown in - it doesn't cook and re-heat well, turns mushy, so I just kept the veggie mix til I wanted it.

It keeps really well, even in the fridge. Just keep the soy mince out of it until you want it in there. I used up my last of it on Sunday, a full week and a day after I made it and it was fine. I did a jacket potato with butter and salt, and the chilli, with no mince, and cheese on top. It was sooo good!

Just throwing out some ideas. Some are more involved than others if you're making it yourself.
Deviled eggs. If you can get good tomatoes, tomato slices with tiny diced garlic or onion topped with olive oil; or gazpacho; or a cucumber tomato "salad". Avocado and cream cheese sushi or onigiri. Walnuts/macademia nuts/pine nuts/pistachios/cashews/pecans/brazil nuts. Orange juice/dried mango slices/sliced apples/pineapple. A gallon of raw milk, a quart a day. Chop up some onion, bell pepper, and mushrooms for his pizza.
Wrap up a pound of carrots in foil with a blended (melted) topping of butter, stone ground mustard, salt and pepper, and maple syrup. Note suggesting cooking temperature and duration. (Idk, how well done does he like his carrots? 1 hour at 350F?)
Homemade ice cream/creme brulee/flan.

Vegetable Lasagna cut into portions and freeze, make a bowl of salad cover and pop in the fridge, A hearty vegetable soup and some of those "bake at home" bread rolls. Chickpea curry with wild rice. Make a few Mexican re-fried bean burritos (sans the salad) wrap in foil and freeze.
