It's a bastardisation derivative synthesis of a variety of martial arts.
It's like MMA (or what Jeet Kune Do was envisioned to be) except it's orientated towards self-defence techniques rather than what you'd expect to see in the sport of MMA.
Effectively, think of the several most popular martial arts. Extract the self-defence techniques from each. Place in blender. Throw in a menorah. Blend. End result is Krav Maga.

The only thing they teach about knives is how to disarm. You will be cut, however, that is almost certain.

Yeah but personally I’d say to look to the Brazilians when it comes to really hurting someone. They’re not just teaching competition legal moves down there.
There’s really no right way to go against a knife. I’m not sure I’d recommend disarming unless you’re really confident in your ability to outmaneuver them. Otherwise I’d say run or fucking hurt them, preferably with something that has better range than a knife.
