I like the crunch and the earthy flavour of the skin. Particularly when diced into large chunks, I don’t find it tough at all. The texture of a baked potato, on the other hand, I believe is unappealing.

Diced roasted potatoes are versatile and go with every meal. It's also simple to throw a pan in the oven to cook while you prep everything else. I usually make enough for leftovers. Extra dinner potatoes become breakfast potatoes or vice versa.
I think my favorite is really good crispy shredded hashbrowns, but they're a pain in the ass. So I'll go with roasted.
