I don't have any "interesting" hobbies really. My hobbies are pretty normal, I work on a lot of animation, art, and music projects.

Ah awesome I appreciate your interest into what I love! I recently finished a simple animation about the PayPal/Voat drama. Right now I am working on a project for a rap artist named Remy Jacuzzi and a lot of stuff for our new Space Ghost style interviews. We have interviews lined up much faster than I can animate right now, here's the proposal video. My main passion is trying to turn my cartoon Foxy Apartment into something truly fun, unique, fucked up, and entertaining. I used to try to share stuff like this on a different site but never seemed to get very far, I am hoping my animations and talents will be better appreciated by the Voat community. I love this place. :)
I'm collecting documentaries by downloading and watching them or hearing them while playing video games.
I've also recently gotten stand up shows and switched between documentaries and stand up comedians. Jim Gaffigan, Ralphie May and Louis CK are among the funniest.
Well I said I collected, but honestly sometimes I watch them or hear them and then I just erase them for space. However, the comedian stand up bits I keep depending if I find it funny. Jim Gaffigan is always awesome to hear since his jokes are mostly funny, and Louis Ck is too hilarious to pass. Ralphie May is another win.
So yeah, mostly I just download and delete them after watching them.

I do some worldbuilding, some writing and roleplay on and off, I play the saxophone, and reading... which probably isn't that interesting.

I'm not too good at explaining it, but worldbuilding, at least for me, is building a fictional world for many purposes, including stories, movies, etc. I personally don't create my own world in which I am essentially god, though, but I am attempting to form a pantheon of some ancient gods, among other things.
As for the sax, I normally play whatever I have to play for my HS marching band and on my own time I try to find ballads or epics and such.

I'm a fencer. I'm not very good at it, but it's social and it keeps me fit :)

Not really, unless it's a flick-shot which can sting a bit sometimes. There's enough protective equipment that you'd very rarely feel any pain.

I just put together a Gakkenflex-clone camera and haven't felt so not-smart in my entire life! But it provided a big sense of accomplishment and I get lost in the worlds I see in the viewfinder. I'm trying to learn more about Lomography and photo editing.

Never heard of an Gakkenflex-clone camera before. Does it work properly? I am currently trying to get an agfa isolette V camera to work but I really have no idea how to.

I got the shutter working before I finished assembling it (but am skeptical that it's still working). And, while the film slipped a bit at first, I've got it winding properly now. (You have to manually advance the film after each photo unless you want a double-exposure.) The Isolette looks really cool! Have you tried asking around v/photography to see if you can get a hand with it?
