That’s awesome (and delicious). Being a cheap person who loves healthy-food bargains, I have often thought of putting up a webpage with a month of inexpensive healthy menus, just to document how much money someone could save, by eating homecooked meals. Not that the average fat would pay attention, but still...!

Lentils are AMAZING! There's a vegan lentil soup called Harira soup and it has chopped veg and no oil (depending on the recipe, but you really don't need any) and it's so great. You can also thicken it and use it as a stew if you wanted to spice up tofu or meat.

FYI, it's a bit like chili, in that it tastes better on the second day because the flavors soak into the lentils.

Chicken leg quarters go for less than a dollar a pound if you get them in the big 10 pound bags, I have seen them as low as $0.47 a pound.

Lentils are seriously the best thing ever. Super cheap, lots of nutrients, lots of fiber, and you can make all kinds of stuff with them. I adore lentils.

With the right seasoning they are out of this world. I'd recommend using them to make yellow lentil soup.

Any time I've eaten them they taste like garden mulch. I guess I haven't been motivated to improve that experience.

Lentils are an excellent source of fiber. You cook them with meat to make them taste good.

I tried getting into it. Yeah, they suck. It's the cuticle film on them that seperates off and never cooks down. If there was an effortless way to take those off and get rid of them letntils would approach split pea level.
Oh, also split peas are almost as cheap as lentils and have a lot of the dietary advantages so.. split pea. Just do that. Now it costs 24 cents and would be a killer meal.
