Their empire was built around conquest. Without conquest they could not sustain anything, and thus everything turned to shit.

You seem to be confused here. In order for something to stop it has to have a beginning. Arabs were clearly advancing scientifically as they were expanding, but when they stopped expanding their advancement slowed down and eventually stopped. By the 15th century there was almost no scientific advancements in their empires. The overwhelming majority of advancements came from Europe.

Do you dispute these facts? if not, I don't see why you're so confused with this. Maybe by the word stop? Then how about slowed down to a crawl? Does that make it clearer?
