I've always wondered whether he was of Dutch ancestry, because of the name which looks fairly Dutch (it's not hugely common here btw but neither is it in the Anglo-Irish world afaik. I do know some Dutch folks with that family name though.) Wikipedia doesn't mention it though.

This is a really great topic.
I will go with George Berkeley. I really enjoyed Three Dialogues between Hylas and Philonous (1713). He managed to make an argument that seems rather sophist seem not sophist, and as it was largely just dependent on God, it was quite tolerable. It was also very interesting and far more influential than people think.
When his idea is described shortly it sounds absurd... but even the very people who call it absurd have been influenced by it as it basically relies heavily on the reductionism that is all the rage.
Even Bertrand Russell spoke quite highly of Berkeley and considered him a large influence in metaphysics -- essential reading, in fact.
