That's over $11,500 per month. I call bullshit that no one else noticed that much food going missing for 9 years. Also, bullshit that no one noticed that fajita guy had a side business making 5 digit revenue every month. Lots of stink on this one.

$11,500 is within the realm of float for a big operation. I've seen that level of waste from employees simply over serving customers, no theft involved. That only one person ever looked at the incoming inventory is the real issue here.
