If he finds it in his car he will not be sure if it was his or if someone who rode in the car had it to charge their phone. Don't get your fingerprints on it or the Sim card or memory stick and use cash to buy a $35 data plan.
With this device you needn't retrieve it to get the data you just mms the device and it replies with it's tracking info.
OTOH, simple solutions are often the best. Whichever of your co-workers has the most common looking car should just follow the guy for a few days.

Put a phone in it and use a find my phone tracker app.
Turn ringer/vibration off !
No money needed.
An excuse if he finds it. "Dropped it by mistake."

This is well meaning but terrible advice. The ownership of the phone is easily traceable and there is no good explanation for why it would be in the guys car unless he just rode in it.
You want to maintain plausible deniability at all times in all things.

You are assuming no one gets in the boss's truck.
Not easy to figure out the owner of a locked phone.
You do have to make sure, can't answer calls when locked.
Even if the boss finds the phone,
he has no idea you attempted to track him.
