All of those purification means are expensive, not enough for the globe, and consume a lot of other resources. It is also a regional thing. The whole planet isn't going to run out of clean fresh water. Certain regions are absolutely going to face scarcity to the point where it becomes difficult to survive. Moving those people is not a viable solution in an immediate fashion.

However, our species isn't going to die because of this. Some species that can't adapt will go extinct, probably. Something like 90% of all species are extinct already. Homo sapien will survive.

Salt. A ton of seawater will be driven inland and mix with the fresh. Salt requires boiling off and condensing, a significantly more intensive project.

Since you seem to have pondered and maybe tested it...

Is it doable to drink boiled sea water (salt remove by distillation) for years ?

Or do you go kidney breakdown for some reason like, idk, the stuff being too pure or some shit ?

Distilling water involves boiling the water, capturing the steam and condensing that steam into another container which will be the clean water. Then you dump the bad stuff left in the boiler with the concentrated crap out. But it takes immense amounts of energy to boil water, plus if you boil it too fast you might splash droplets of contaminated water into the condenser.

Boiling the water may kill off the living organisms that make water potentially dangerous, but it will not remove or destroy the organic/inorganic substances that can also make you sick or dead. If you boil water too much you will end up concentrating the substances that are not driven off or broken down by the heat therefore making it more dangerous in smaller quantities. Full distillation can fix this but the process is less efficient and takes much longer. Long term drinking of distilled water can leach minerals like calcium from your body if you are not getting an adequate amount of them from your food source so you may need to supplement these minerals as well. No matter how you stack it, creating potable water from a polluted source is not ideal for large volumes or quick need. A Life Straw or other personal water cleaner device (including the tablets you speak of) can be a life saver so long as you're only faced with biologics or non-hazardous contaminants in the water source. Ultimately potable water is best to start from relatively clean and dynamic water sources which is what people are afraid to run out of.
