Malazan, Book of the Fallen by Steven Erikson. Don't be put of by the shear volume of work and the neverending introduction to new characters. It has war, strategy, unexplored territories, gods, ascendants, philosophy, martial arts/ weapens, incredible dialogue, brutality, magic, beasts, friendship, deceit, violence, sex and death. A lot of violence and death. If I could read only one book for all of my life this would be it.

Off the top of my head, Harry Potter will always have a place in my heart. The second one is probably Beyonders :)
I read Susan Cooper's The Dark is Rising series about 25 years ago in sixth grade. It was my introduction to reading fantasy and I've never forgotten it. From there I traveled to Narnia and then Middle Earth. I've read all of those series multiple times and the characters feel like old friends. It all started with one great librarian.

From the very limited amount of book series I've listened to, my favorite is Enderverse.
I'd suggest you get the audiobooks. It has great voice acting, and the author thinks that's the best way to experience his books.

Night Angel - Brent Weeks. Avoided because of stupid covers but quite good
Farseer trilogy -Robin Hobb. Same type of story vain as above
Sheepfarmer's Daughter (Deed of Paksenarrion) - Elizabeth Moon

King-Killer Chronicles, by Patrick Rothfuss. Dark Tower, by Stephen King. All of the early Raymond E. Feist books.

Ngaio Marsh's Roderick Alleyn or Michael Dibdin's Aurelio Zen mysteries.
