I'll pick a lesser known series by Patricia C Wrede: The Enchanted Forest Chronicles. It's for young adults and it leans toward a female audience with memorable female protagonists, although it's a book about dragons, magic and adventure. The subject matter is young enough that you could even read it to a younger child at story time!

The Hornblowerseries as a young man. The American military-history novels by Jeff Saara as an older one.

I read Susan Cooper's The Dark is Rising series about 25 years ago in sixth grade. It was my introduction to reading fantasy and I've never forgotten it. From there I traveled to Narnia and then Middle Earth. I've read all of those series multiple times and the characters feel like old friends. It all started with one great librarian.

I have two that I keep going back to: The Three Musketeers universe by Dumas and the Legacy of the Aldenata series by Ringo. I save Dumas for cold winter days and Ringo for summer-time poolside fun. Been through both at least 3 times now, probably more than 5 for Ringo since they are such a quick read.
