What's wrong with the knife? it was a project that I posted over at v/knives a while ago, unfortunately sli.mg went down ans the pics were scrubbed.

O.k. fine, now I have to go figure out the measurements, I normally do this by taste. Give me a few moments.

Just to fuck with you I left these in metric! Ha!

To a big pan ( you can use a pot if you want) I added all of this stuff:

1150 ml Heinz Ketchup

500g White sugar

250g of raw brown sugar

150g of honey

50cl Worcestershire

I tbl mustard

25g spicy paprika

12g chilly powder (not the American chilly powder! Euro chilly powder is just chillies, adjust on your own for how much heat you want)

2 big pinches of white pepper

2 big pinches of garlic powder

A splash of vinegar at the beginning and one at the end (the first splash adds flavor to the sauce but eventually burns off, the second adds the flavor back)

A dash of sriracha sauce

I let this simmer on a really low heat for 3 hours, stirring about every 20 mins or so; the flavors really meld together well if you cook them low and slow. I use this sauce on both pork and chicken but you can experiment as you wish, it tastes damn good!
