We have a great meatloaf recipe that instantly became our holiday tradition. But it's a meatloaf/mashed potatoes combo, so maybe I'll try playing around with the meatloaf aspect.

Change it up a little.

Make the meatloaf in hamburger sized patties, with a wine/soy sauce/ketchup sauce and use white rice instead of potatoes.

The sauce should look like a BBQ sauce in color.

In the meatloaf: sauteed onions (not browned), panko, egg and salt and pepper. Bacon and green pepper perks it up a bit.

Make homemade mac and cheese. Nothing like that crusty browned edge cheese part. Lasagne would be great, too.

I started messing around with gumbo a few years ago and it's become a staple in my house. Toast the flour in an oven instead of the stove top roux though.

Both fresh and powdered ocra? I've gotten pretty well acquainted with gumbo since moving to Louisiana. Can't say I ever had it before I was able to grow ocra.

Hamburger patties with onion gravy. Served with mashed potatoes and mac and cheese. All home made of course.

I find it easier to make a large thing of Mac and Cheese and serve it as a side multiple nights.
