Oh, I feel for you. My mom was an awful cook too and growing up I thought I didn't like food. Ha! I've got to run but will be back on this thread later to day to share some recipes with you. Just because your mom was a bad cook doesn't mean you'll be one- it took some practice but I became a kick-ass cook and you can too. Edit: What would you rate your cooking level now? What skills do you have and what equipment do you have in your kitchen?

Make homemade mac and cheese. Nothing like that crusty browned edge cheese part. Lasagne would be great, too.

We have a great meatloaf recipe that instantly became our holiday tradition. But it's a meatloaf/mashed potatoes combo, so maybe I'll try playing around with the meatloaf aspect.

Change it up a little.
Make the meatloaf in hamburger sized patties, with a wine/soy sauce/ketchup sauce and use white rice instead of potatoes.
The sauce should look like a BBQ sauce in color.
In the meatloaf: sauteed onions (not browned), panko, egg and salt and pepper. Bacon and green pepper perks it up a bit.
