It points "straight up" because there is no reason for it not to be. In zero-G, the hair isn't being pulled down by gravity any faster than anything else, so everything floats.
If you put food coloring into a filled water bottle, then drop the bottle, the food coloring stays floating around - the water and coloring fall at the same speed. The water is like the air in the station and the coloring floats just like her hair. Easy!

In space there should be no directional preference. So everything going up makes no sense.

Exactly. That's what was wrong when you said:
The hair actually goes straight out from the head along the follicle line, instead of "up", since as you now realize, there is no "up" in space.
