Well...
If you want to watch a "so bad its good" bollywood film, go see Karan Arjun (you have been warned).
If you want to see like the zenith of over-the-top Bollywood romance go watch Dilwale Dulhaniya Le Jayange and Kuch Kuch Hota Hai.
If you want to see how colourful and operatic Bollywood can get, go see Devdas (2002)
If you want a gritty gangster movie watch Satya, Vaastav or Gangs of Wasseypur.
If you want crime from the cops point of view, watch Sarfarosh
If you want a 'sports' type film watch Lagaan (Really, REALLY long but very nice) or Chak De (shorter film)
If you want high drama check out Omkara (Adaptation of Othello).
If you want to see good old movie, from like the sixties, watch Guide or Balika Badhu.
If you want an 'alternative' film - no plot but still good point and acting - watch Being Cyrus or Krantiveer
If you want one of those twists and turn types with black comedy, watch Ishqiya or Delhi Belly
If you want to see what kind of films win National Awards, Indian type of Oscars, watch Zakhm or Highway (2014)
If you want to see a light, but near perfect, romance and slice of life, check out Piku.
Naturally this is off the top of my head and more my fav films than some standard list. The industry has existed since the 1940s and makes some 100 films a year. Even if you distill just the 'good' movies the number is in the hundreds. But these should be a good start.
Tell me what sort of stories you are interested in and I will try to think of more. Just 'Bollywood' is just too huge a category. We are talking about thousands of films in totality. And since you aren't Indian and will be watching with subtitles anyway, why stop at Bollywood? Tamil and Malayalam films are far better in terms of quality.
