For VR, the bigger the soundstage the realer it will feel and I assume realism is the name of the game when it comes to VR. Also, although Grado headphones aren't renown for their wide soundstage, they are renown for their extremely air/live feel to the sound so trying stuff like the Grado RS1e or PS500e is also a good choice.
For a big soundstage and hearing the location of the sound well I love my Sennheiser HD 700. Although you should just try out different headphones and get the ones that work best for you.
Similarly, I have been using my AKG K702's with my Rift and love them! I have never heard such a wide soundstage from a pair of cans like I do with these puppies.
