Dog fighting.
Get a dog and train it up together. I don't recommend a small or weak dog for this or it will end in tears. Best thing is to train it while listening to "Eye of the tiger".
Get in touch with your local dog fighting league and get your dog registered to fight.
Hand the dog over to your son and encourage him to do his best in climbing the ladder. Bet hard on his dog to make some extra cash.

A lot of these are quite outdoorsy, and require an older kid. I plan on teaching my young son electronics, coding and engineering using lego and raspberry pi computers and boards. I've no idea yet, but he's only just started school and expressed interest in simple plug together electronics kit.
depends on the age:
For a young teen the ideal project is buying an old inexpensive car and helping him rebuild it so he has a great car when he gets old enough to drive.
But you have to get their interest first.
Let it go over a few months or a year.
Warning: too big a project will be too much frustration
