I would highly recommended getting the Tale of Two Wastelands mod since you have both fallout 3 and new vegas. It allows you to play through both the capital wasteland and vegas and runs on the NV engine, which should run smoother on newer OS's. Also you wouldn't have to get an iron sights mod because NV already has that.

When playing through Fallout, or any Bethesda game really, be sure to go off the beaten path. While the stories and most easily accessible quests are fun, I find most of the fun to be in the exploration. In dark corners of abandoned buildings, in places you never even thought of you'll find new places to see, new people to talk to, and more. Don't limit yourself to the path!
If you can get New Vegas (my favorite in the series) and get Tale of Two Wastelands, it's full of bug fixes and connects the two games together.

The reason so many of us are still playing this game years later is all the little details tucked away. There are many vaults/caves/towns tucked away deep in the wasteland with no direct access to the main roads and the only way to find them is to wander on out there.

Hilarious glitches everywhere. Literally everywhere.
Just regularly save, and check for glitches in the Fallout Wikia.
Apart from that it's an incredible environment, be sure to read everything that you find.
