I play vanilla survival with my wife and occasionally also my daughter. We explore, mine, build, farm, fish, and pretty much anything else available in the game. I'm the builder, she's the miner. Sometimes we help each other with stuff. Eventually we'll burn out and abandon the world. In a month or two, we'll create a new one.

My daughter does her own thing most of the time. She's five, so she can sit there for hours just screwing around with whatever. The wife and I mostly just play. She's really into cave exploration and the treasure hunting involved. Whatever she brings back, I'll build cool structures with. I also take care of our gears, so when she's not on I'll turn mobs on and load up on enchanting experience. The combat update has been awesome.
Like I said before, we'll eventually burn out on it and take a month or two off. Then it's just exciting again starting fresh in a new world, building up from nothing.

Can't. Modded or nothing, vanilla is too damn boring.

That's the way I'm starting to feel.. I'm glad it's taken 6 years to happen, but I am completely unable to remain playing in vanilla for more than 10 minutes before I just get bored and talk to people on the server.
