people get anxious, afraid, nervous and go in fight and flight mode. they "arm up".

Let's be honest, in real life they'd cower like a bitch. I live in a state with legal open carry. I was standing in line at a McDonalds once, and this woman with an accent I'm not familiar with points at an open carrier ahead of me and whispers to everyone around her, "oh my god he has a gun". She gets weird looks. No one answers her. Then she starts urging people to call the police. Someone turns around and tells her to shut up, it's legal. She gapes for a second and then goes back to standing in line quietly, but staring at the guys gun the whole time.
That's what would happen if this idiot saw someone carrying in real life.

If someone is assaulting you with a non-deadly weapon, does it count as self defense if you shoot them with a gun?

Not a lawyer or anything, but if you end up in any fight where you are armed, you have to defend your weapon, which can mean drawing it on an unarmed opponent. If they take your weapon, your life is now at risk. That is why when you concealed carry you must become the most humble person on earth.
